Taste Test: Clean Eating Edition

Instead of boring you for the next several posts with Taste Tests, I'm going to put them all here.

Breakfast:
Banana Oat Greek Yogurt Muffins
Last time I did the clean eating challenge, I really missed sweets. This time I intentionally looked for recipes that incorporated a sweet element. This picture looked so yummy, I had to give it a shot. I will say if it wasn't for the chocolate chips, I would not have been able to handle these. They had a bit of a mushy texture, but the chocolate chips helped me power through. If Stephen had not helped me eat these, I would have thrown half of them away. It was tough to power through the last two on day 3 of eating them even though I spaced them out throughout the week. I'll eventually try these again. They were SUPER easy to make. They didn't look as good as this picture, but they were appetizing enough. Click picture for full recipe.

Dinner:
Pineapple Grilled Chicken
We are loving having a grill! And Stephen is loving trying new things. I will admit I was a little hesitant about this one when I mixed up the marinade. It looked a little questionable to me. But it was SO good! If Stephen didn't already have lunch plans the next day, I'm not sure he would have let me take the leftovers for lunch. I made brown rice to go with it. This will definitely be a regular in the rotation! Click picture for full recipe.

Beef Stew
We love beef stew so when I saw this clean eating version, I definitely threw it onto the list. It was much easier to put together than I expected and we actually made it twice the week we did this. So that tells you how good it is! Click picture for full recipe.

Pecan Crusted Chicken Strips
I'm always looking for new ways to bread and bake chicken. I was a little disappointed with this one. I got hesitant about it when I put the breading in the food processor to mix up. I was expecting to have dry bread crumbs to coat the chicken in, but it was actually moist. I didn't make my own my honey mustard because I had a brand new bottle of Sweet Baby Ray's Honey Mustard in the fridge I wanted to use. Stephen really liked this and even went back for seconds and ate leftovers. The texture was weird for me and I didn't love the taste. Chick-Fil-A sauce makes anything better so what I did eat I covered in sauce. I think I'll stick to my cornflake breading! Click picture for full recipe.

Snacks/Dessert:
Banana, Chocolate, Coconut Popsicles (I left the coconut out)
I like bananas and I like chocolate so I thought this recipe would be a good one to try and curb my sweet cravings. These were really easy to put together too. However, they didn't have much flavor. Stephen ate one of these one afternoon and I took one bite of it. Grilled Chicken and Blueberry Salad with Homemade Dressing
This salad was really hard to eat with my braces so I only ate half of it...The dressing didn't turn out a good this time. It separated a lot, but still tasted okay.

We're running in a 5k next weekend so I am going to try and eat clean this week. I have several more recipes I pulled when I was doing my research that I'm excited to try. I'll let you know how it goes!
