Taste Test: Clean Eating Edition Part 2
Power Protein Egg Cups
There are three egg cup recipes on this site. I made the first one, the power protein egg cups. Although I should only probably call mine the protein egg cups because I only used bacon. Since I left the chicken, onions, and peppers out, I used 6 pieces of turkey bacon instead of the 2 the recipe calls for. This was messy to put together. I bought eggs and separated out the yokes so that I only used the egg whites. They looked a little weird so I was hesitant to try them. Stephen ate one first on Monday morning, but didn't warm it up (yuck!) so his review wasn't great, making me even more hesitant. I did try them the next day and they weren't bad. It tasted just like egg and bacon. We didn't eat anymore after that so I doubt I'll go through the hassle of making them again. I'd rather just have fresh eggs and bacon. Click the picture for the full recipe. *The recipe says to cook 15-20 minutes, I cooked them for 28 minutes before I felt comfortable taking them out.*
Pumpkin Waffles
My biggest problem with clean eating is craving chocolate...mainly chocolate chip cookies...so I'm always looking for healthy recipes that use chocolate. Chocolate chip pumpkin waffles sounded great. The effort with this was typical of baking anything. Not hard, but a bit time consuming. I had my waffle maker out and ready to go, but wasn't sure how well pre-made waffles would hold up throughout the week and my waffle maker always makes a huge mess. So, I decided to bake the batter as bread instead. I baked it at 350 for 45 minutes. It turned out great! Stephen and I both really liked it. I won't lie, a cup of sugar would have made it a lot better. :) And I do wish I had put more cinnamon in because it was a little bland. Even as a bread, it didn't hold up all week. Mid-way through the week it became kind of mushy and had a weird taste so we threw the rest out. But overall for an all natural baking recipe, it's the best I've found! Click picture for full recipe.
Carnitas
We like making pork in the crock pot. Plus a crock pot meal is always so easy. I left out the cumin powder, chili powder, and grass fed organic ghee (because who knows what that is?!). The orange and cinnamon flavor with pork was interesting. It was very light, but you could definitely taste it. I didn't hate it, but I'm not so sure how I feel about pulled pork tasting like Christmas spices. I added a little barbecue sauce to it and we enjoyed it. I usually make pork with just a little Coke poured in the bottom of the crock pot. I'll probably stick to that, but enjoyed a twist on the traditional pulled pork. Click picture for full recipe.
Chicken Chili
We love making chili so when I saw a healthy chicken version, I threw it on the list. I'm not sure I can give accurate feedback on this recipe. Stephen likes his chili to be really soupy. If you make this like it says, it is soupy, but not super soupy. So, he decided to go out and get some tomato soup to add to it at the last minute. Two problems with this: he bought and added TWO cans of tomato soup and added it at the very end of cooking, only allowing it to get heated up, but not really cook in the chili. I don't know how it would have been without the soup added or if the soup had cooked the whole time with it, but adding two cans at the end just made it taste like tomato soup to me. He liked it; I couldn't even finish one bowl. We left out the zucchini, fire roasted tomatoes, cayenne pepper, cumin, and chili powder. I hate cumin flavor and don't love spicy stuff. We probably should give this one another shot, but will probably just stick to our original chili recipe that we both really like! You know...click the picture for the full recipe.
