I can't remember of this recipe came from my friend or another website I found. I got a lot of my recipes for the 5 day clean eating challenge from this site. Either way, it was good!
Ingredients:
5 cups mixed greens
1 cup blueberries
1.4 cup slivered almonds
2 cups cubed cooked chicken breast
Dressing:
1/4 cup olive oil
1/4 cups apple cider vinegar
1/4 cup blueberries
2 Tbs honey
Salt and pepper to taste
Directions:
In a large bowl, toss the greens, blueberries, almonds, and chicken breasts until well mixed.
For the salad dressing, combine the olive oil, apple cider vinegar, blueberries, and honey in a blender. Blend until smooth. Add salt and pepper to taste. (I didn't think it needed any)
I ate on this salad several times throughout the week and really liked the salad dressing. It had a sweet vinaigrette test that I loved.
Quick with easy ingredients! I'd give it an 8 out of 9.
