Snow Day(s)

Apparently the Farmers Almanac had big projections for this winter. With only one "snow" day (really it was nothing) in January and being over half way done with February, I was beginning to get discouraged.

Not to mention this stretch after Christmas really sucks for teachers everyone if there isn't one or two snow days thrown in.

Even though the ground is barely white, the ice has managed to get us two snow days so far preceded by a 3 hour early release! Thirty minute classes and out in time to have lunch like a real person on a Monday? Yes, please!


After the past two weeks, it was SO needed for this teacher!

They made the call early, so all alarms were turned off for Tuesday morning. After sleeping in, we made homemade cinnamon rolls and put chili in the crock pot. Then, with a little school work thrown in, we watched a lot of The Big Bang Theory (our newest obsession), went for a walk, braved the roads for a grocery store and pizza run, and ended the evening with a double feature where I managed to stay awake for both movies!

Today will consist of laundry, more school work, and catching up on reading. 

A little Taste Test for you...
If you're interested, click the image above for the recipe we used for homemade cinnamon rolls. They were great! Not as good as the can, but still delicious!

Our chili:
1 lb ground beef, cooked
1 can black beans
1 can red beans
1 can white corn
2 cans tomato soup
1 packet of ranch dressing mix
1 packet of taco seasoning
Combine ingredients in crock pot
Cook on low or high (depending on how fast you need it ready) until it bubbles
Stir occasionally (optional)

We LOVE this chili! It goes great with corn bread also!
