Taste Test: Loaded Broccoli Cheese and Potato Soup


I love a good broccoli and cheese soup. Stephen gets credit for us trying this recipe, though. We were making a grocery list the other day and he scrolled through my Pinterest and added some new recipes for us. The work load for this was not easy, but not impossible either. It was easy to put together, full of simple ingredients. Stephen loved that no onions were involved, which is rare for a broccoli and cheese soup. Mine ended up soupier than I wanted, but I used the highest amount of milk and had to add extra chicken broth when I added the broccoli because most of mine had boiled out and I didn't want the potatoes to burn. I put mine in the crock pot for a few hours because we weren't ready to eat when I finished and I was hoping that would thicken it up. It didn't, but it was still good. It wasn't as filling as I would have liked, but that could just be pregnancy problems. Other than what I took for lunch the next day, Stephen ate all of the leftovers which is very rare for him. Overall, we'd highly recommend it! It will probably hit our menu again on a nice snowy day (fingers crossed for some of those this winter).

I'd say 8 out of 10 for this.
